White Bean Soup with Pork and Kale Recipe

Whether you take this soup to a holiday gathering or make a big batch for a week of thermos lunches, it’s safe to say that this quick recipe will nourish you well.

White Bean Soup with Pork and Kale

USWM Shopping List: (1) Beef Tallow, (1) Ground Pork, (1) Chicken Broth

Ingredients:

  • 1 Tbsp Grass-Fed Beef Tallow
  • 1 pound Pasture-Raised Ground Pork
  • ¾ tsp salt or to taste
  • Black pepper to taste
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 1 Tbsp smoked paprika
  • ¼ tsp crushed red pepper
  • 4 plum tomatoes, chopped
  • 8 cups chicken broth, homemade or US Wellness 
  • 1 cup celery, sliced
  • 8 kale with ribs removed, loosely packed
  • 2, 15 oz. can of cannellini beans, drained by 1/3 of the liquid

Instructions: 

  1. In a 5 qt. stock pot. Add beef tallow over medium heat and add diced onion and minced garlic. Sweat until translucent, add ground pork, and cook until browned. 
  2. Give it a dash of salt. Add paprika and crushed red pepper. Add 1 cup of broth, kale, celery, and tomatoes. Stir to scrape up all the bits in the pan.
  3. Bring all to a simmer, occasionally stirring, until kale is tender. Add the remaining chicken broth and the drained beans. Bring to a simmer for 20 minutes, stirring as needed. Season to taste.
  4. This is also an excellent lunchbox thermos meal.
