“Skip the Whey Protein Shake”

Looking for a fast and delicious shake that’s ideal for post-workout or a quick energy boost? Check out June 2023 Featured Chef Jerry Nestoratos’ recipe that uses US Wellness Meats’ beef liver, powdered collagen, and more instead of the traditional whey protein powder clump. This fantastic substitute “Skip the Whey Protein Shake” is loaded with micronutrients and jam-packed with vitamins!

Bonus preparation tip: This recipe calls for raw liver or heart. Freeze the offal for at least 2 weeks before consuming it to kill pathogens and harmful bacteria. Let the frozen pack thaw slightly in the refrigerator overnight, 8hrs. Slice and portion offal into 28-gram (1 oz) strips. Lay parchment paper on a 10” x 13” sheet pan and place offal evenly onto the pan. Allow the offal to freeze completely. Place offal into a glass storage container and store in the freezer.

USWM Shopping List: Beef Liver or Beef Heart, Raw honey

Ingredients:

Beef Liver OR Beef Heart, 28 grams

Raw milk, kefir or local farmer’s milk, 245 – 350 grams (www.realmilk.com)

2-3 raw egg yolks (preferably local)

Frozen Organic Wild Blueberries or Berry Mix (70 grams)

Raw honey (1 – 2 tbsp)

Collagen peptides (1 scoop)

Camu Camu or Acerola Powder (half to 1 tsp)

Matcha Powder (1 teaspoon) optional

Organic Vitamin D3 10,000IU

Instructions

  1. Place a 32 oz Mason Jar or Smoothie Cup on a scale and tare (yes, measuring ingredients creates consistency and allows tweaks!). Follow the order of the stack below.
  2. Add the milk, 245 – 350 grams
  3. Add the frozen berries and offal (either Liver or Heart)
  4. Add the egg yolks
  5. Add raw honey (1 tbsp, add 2 tbsp if using for post-workout)
  6. Now for the dry ingredients, add collagen peptides, Camu Camu or Acerola, and MATCHA
  7. Blend until super smooth
  8. NOTE: When consuming Liver aim up to 4 oz per week or half oz per day. Alternate weekly between Liver and Heart.

I had been searching for a recipe to eliminate Whey Protein powder post-workout. Whey Protein (even the organic brands) are highly pasteurized, processed, and toxic for your body, quite the opposite effect of post-workout nutrition. I came up with the following recipe to fuel my body first thing in the morning post-workout. Most people (young and old) either skip breakfast completely or grab convenient foods aka processed (KindBar). This smoothie, pound for pound packs a great punch and nourishes your body to take on your daily challenges. For the athletes and gym warriors, tweak the carbs as you see fit! Enjoy!
