Reverse-Seared Tomahawk Steak

Steak enthusiasts everywhere are wild for the reverse sear method, and we understand why! This mouth-watering recipe by our June Featured Chef, Jerry Nestoratos, will leave you beyond satiated. The Tomahawk steak is perfect for this recipe as it works with any steak at least 1.5 inches thick. 

Bonus Preparation tip: Purchase Primal cuts and get into the habit of portioning out your own steaks; enjoy the process and save money! 

Reverse-Seared Tomahawk Steak

USWM Shopping List: Beef Standing Rib Roast (any size), Beef Tallow, Anchor Unsalted Grass Fed Butter

Ingredients 

USWM Tomahawk steak at least 1.5 inches thick 

Salt (preferably Maldon or Real Salt) 

Pepper (optional) 

Garlic powder (optional) 

Instructions 

  1. Dry brine the steak for 8 hrs or up to 24hrs; aim for full coverage. ONLY SALT at this step. 
  2. Set your grill or oven temperature to 250°. Additional seasonings can be added to your steak at this step. Bonus: add your favorite would chunk for smoke flavor. 
  3. Place your steak in the oven or on indirect heat on the grill. Cook until the desired temperature has been reached (use a food thermometer). I like my steak medium rare; this process takes 1hr or until the internal temperature of the steak has reached 125° 
  4. Pull the steak from the oven or grill and have it rest on the side. Preheat a cast-iron skillet to 500° or until smoking / raise the temperature of your grill. Add 1 tablespoon of tallow or butter to the pan, and sear for 2 minutes on each side. Baste occasionally. 

Important! Let your steak rest for at least 5 minutes (tempting, I know). Slice against the grain and enjoy! Take this a step further and serve with sliced mango, raw parmesan cheese and raw local honey! Delicious, nutritious you will think this a cheat meal! Super nourishing for your body! Definitely a date night twist.
