Jerry Nestoratos Greek Keema

A popular dish in Indian cuisine is Keema, which is typically made with ground beef or lamb. Our June Featured Chef, Jerry Nestoratos, has created a flavorful Greek rendition of this dish using 100% Grass-Fed and Finished organ grind and ground beef, along with an array of delicious spices and nutritious bone broth. This recipe is not only easy to prepare, but it also promises to tantalize your taste buds.

USWM Shopping List: Ground Beef (with liver, heart, and kidney) | 85% Lean Ground | Beef Bone Broth

Ingredients:

2 packs of USWM Ground Beef (with Liver, heart, and kidney)

2 Packs of USWM 85% Lean Ground Beef

4 Garlic cloves (minced)

1 Cinnamon stick

3 Bay leaves

1 Large white onion (diced)

Salt to taste

Oregano to taste

2 cups USWM Bone Broth

Optional (9 oz cans of organic diced tomatoes by Jovial)

Optional substitute liquid (2 cups organic red wine)

Instructions

  1. Bring a large pot to medium heat, add tallow and onions, and put the lid on. The goal is to aim for well-sauteed onions. Total time should take at least 10 minutes. Add garlic last so it does not burn.
  2. Add your meat (2 packs at a time), use a stainless steel wire masher, and break up the meat with the help of a wooden spoon (put some muscle into it!) until coarsely ground. Allow the meat to cook until lightly brown.
  3. Season with salt and oregano to taste
  4. Add your tomatoes (allow for some liquid to evaporate)
  5. Pour in the bone broth (or wine) and bring to a boil
  6. Throw in the cinnamon stick and bay leaves; now turn the heat down to medium/low and stir every 30 minutes until most of the liquid has dissolved! (About 2 hrs cooking time – this builds flavor!)

Cool and enjoy a healthy hearty dinner with organic brown rice pasta (or your favorite side) topped with raw parmesan cheese! We paired ours with Spaghetti Squash! – Jerry
